The Holly Hotel has been dealing in dinner service since 1891, when it was still a functioning hotel. While much of the interior and décor remain unchanged since that time, the food is all made fresh daily in the present. Produce is delivered thrice a week from Detroit's Eastern Market, with fresh fish flown in from Hawaii and chicken catapulted in from free-range farms in Indiana. The Holly Hotel's qualified chefs coalesce these fresh ingredients to forge a dinner menu of delicacies that harkens back to the classical cuisine of the Victorian Age. Much of Holly Hotel's menu changes daily, but recent entrees, accompanied by soup and salad, have included a lamb striploin with shiraz reduction and tomato concasse ($28 for non-club members) and a roasted golden tilefish flanked by delicate Parisienne carrots and an avocado and sweet-pea mousse ($29 for non-club members). The stately hotel and restaurant has been on the National Register of Historic Places since 1980. As it enters its third century of food service, this sophisticated staple continues to up the atmospheric ante with late Queen Anne Victorian architecture, candlelit tables, and cotton linens.
